This course introduces the fundamental concept of carcinogenesis and elicit the awareness of carcinogens in our daily life.

Carcinogens are the substances that can cause cancer; whereas, they are commonly found in foods and being generated during the food processing and cooking. In this comprehensive course, it focuses on the different aspects of carcinogenesis such as carcinogens classification and sources, toxicological effects, gene mutation mechanisms and carcinogenicity tests. Moreover, common carcinogenic foods and high-risk cooking methods will be discussed. Upon the completion of this course, the awareness of food-induced carcinogenesis will be developed.
